What Is ISO 22000?

ISO 22000 is the international standard for food safety management systems (FSMS), published by the International Organization for Standardization (ISO). The current version is ISO 22000:2018, the second edition. It combines the principles of HACCP (Hazard Analysis and Critical Control Points) and the Codex Alimentarius with a management system structure, enabling any organisation in the food chain to control food safety hazards and ensure food is safe at the point of consumption. Certification is issued by accredited certification bodies such as Bureau Veritas, SGS, TUV, BSI, and LRQA following a Stage 1 and Stage 2 audit. An ISO 22000 certificate is valid for 3 years and is maintained through annual surveillance audits.

ISO 22000 Requirements

ISO 22000:2018 follows the Annex SL high-level structure and applies the Plan-Do-Check-Act cycle at both the management system and operational levels. Its core requirements include:

  • Understanding the organisation, its context, and the needs of interested parties across the food chain.
  • Leadership commitment and a documented food safety policy.
  • Planning that addresses risks and opportunities and sets food safety objectives.
  • Support through resources, competence, awareness, communication and documented information.
  • Interactive communication throughout the food chain.
  • Prerequisite programmes (PRPs) that maintain a hygienic operating environment.
  • Hazard analysis and a HACCP plan defining critical control points (CCPs) and operational prerequisite programmes (OPRPs).
  • Traceability, emergency preparedness and response, and control of monitoring and measuring.
  • Performance evaluation through monitoring, verification, internal audit and management review.
  • Updating the FSMS, corrective action and continual improvement.
